Healthy Beef Pot Roast Recipe

There's nothing better on a rainy, blustery day then filling your kitchen with warm, savory scents as you cook up some old fashioned comfort food. This roast is a perfect choice, it's warm, rich, spicy flavors will make you wish it was dinner time right now!

If you thought you'd never find a healthy recipe for pot roast, look no further. It has all the flavors you love, with less of the fat you don't want.

Ingredients:

1/2 cup onion, chopped
2 Tablespoons water
2 1/2 pounds beef chuck roast, boneless
2 cups hot water
1 cube beef bouillon
2 Tablespoons orange juice
1/4 teaspoon ground allspice
1/8 teaspoon pepper

Directions:

1. Simmer onion until tender in 2 tablespoons water in heavy, deep skillet.

2. Add roast to skillet; brown on sides.

3. Combine beef bouillon cube with 2 cups hot water; stir until dissolved.

4. Combine orange juice, allspice, pepper, and beef broth. Pour over meat. Cover and simmer, about 2 hours.


Makes 4 Servings, about 3 ounces beef each, plus 4 servings for another meal
