How to Make Healthy Mexican Pozole

This delicious and easy Mexican Pozole recipe is a popular stew known to be made with corn or maize. In our rendition, we used hominy, which is made with dried maize kernels. Ingredients:

  • 2 lb. lean beef, cubed
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 clove garlic, finely chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup cilantro
  • 1 can (15 oz) stewed tomatoes
  • 2 oz. tomato paste
  • 1 can (1 lb. 13 oz.) hominy

Directions:

1. In a large pot, heat oil, then sauté the beef until no longer pink.

2. Add onion, garlic, salt, pepper, cilantro, and enough water to cover the meat. Cover the pot and cook over low heat until meat is tender.

3. Add tomatoes and tomato paste. Continue cooking for about 20 minutes.

4. Add hominy and continue cooking over low heat for another 15 minutes, stirring occasionally. If the mixture is too thick, add water for desired consistency.

Tips for Making Mexican Pozole

If you're not a fan of beef, feel free to use another protein such as boneless, skinless chicken breasts or pork. You can even opt to take out the meat altogether and add veggies such as zucchini, kale, or another tasty green vegetable.
