Bacon and Cheesy Potato Casserole Recipe

Mmmmm…. bacon… mmmm …cheese! Most would agree that these ingredients are irresistible by themselves and when they are combined… they are simply divine!

If you love bacon and cheese, our bacon and cheesy potato casserole will be a meal you won’t be able to resist. Read on to find out how you can make this recipe for your family.

Bacon and Potato Casserole

The recipe requires 4 cups of frozen, shredded hash brown potatoes, ½ cup finely chopped onion, 1 cup shredded cheddar cheese and 8 oz of bacon. Take half of each of these ingredients starting with the potatoes, then onion, then bacon and then cheese and layer them in a prepared baking dish. Then repeat the layers.

In a separate bowl, combine 12 oz. evaporated milk, 1 large egg lightly beaten and 1 ½ teaspoons seasoned salt. Pour evenly over potato mixture and bake for 55 to 60 minutes.

Uncover and bake an additional 5 minutes. Let stand 10 to 15 minutes before serving.

The dish will come out like a casserole that can be cut into to make a pastry-like dish that is great for breakfast when served with a side of fresh fruit and a strong cup of coffee. It contains all the ingredients necessary for a hearty morning meal like a hash brown, bacon and of course, ooey, gooey cheese.

Of course, there are variations you can make on this recipe to make it more suited to your liking. If you prefer your onions to be cooked, you can sauté them in reserved bacon drippings to give them an added flavor.

You can vary the type of cheese you use. Cheddar works well but you can use any type of cheese you prefer like Swiss, mozzarella and more.

Some home cooks will also want to make their own hash browns. This can be done by shredding potatoes and cooking them in butter while sprinkling them with salt, pepper, cayenne pepper and paprika. Then cook until browned all over.

To make the dish healthier, you can use turkey bacon or add your choice of vegetables.

Cheesy Potato

While the bacon and cheese may be the star of the dish, we can’t forget about the potato.

Not only are potatoes delicious, but they are also packed with essential vitamins and minerals that help boost the immune system and improve energy levels. They are rich in potassium, vitamin C and fiber. The potassium reduces the risk of heart disease and fiber satiates hunger while supporting gut health.

While we love the way the hash browns were used in this dish, there are also plenty of recipes online that use cheese and potatoes as the chief ingredients. Here is one for Easy Cheesy Potatoes.

To make the recipe, start with 3 lbs. of diced fresh potatoes.  Place in a saucepan with cold water and simmer 12 to 14 minutes.

Melt ¼ cup butter and add 1 cup sour cream, 1 cup cream of chicken soup, ¼ cup green onion and 1 1/2 cups of cheddar cheese.

Toss in potatoes, combine and spread into a prepared baking pan. Top with ½ cup cheese and bake 28-30 minutes.

To make this recipe, start by combining 1 (10.5 oz) can of cream of chicken soup, 2 cups sour cream, 1 tsp. salt, 1/3 cup green onions, 1 (30 oz) package of Ore Ida Shredded Hash Brown Potatoes and ¼ tsp. black pepper. Spoon the mixture evenly in a baking dish.

In a medium bowl, combine 2 cups crushed corn flakes cereal and ¼ cup melted butter. Sprinkle on top of the hash brown mixture.

Bake uncovered 45 to 50 minutes. Rest 5 minutes before serving.

Season with salt and pepper to taste and garnish with sliced green onion if desired.

The dish will have a sticky consistency and can make a great side dish or a main dish when served with a side of veggies or a fresh salad.

Ingredients

  • 4 cups frozen shredded hash brown potatoes

  • 8 ounces bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 12 ounces evaporated milk
  • 1 large egg, lightly beaten
  • 1 1/2 teaspoons seasoned salt

Instructions

  1. Preheat oven to 350°F. Grease an 8-inch square baking dish.
  2. Layer 1/2 potatoes, 1/2 onion, 1/2 bacon and 1/2 cheese in prepared baking dish; repeat layers.
  3. Combine evaporated milk, egg and seasoned salt in small bowl. Pour evenly over potato mixture; cover.
  4. Bake for 55 to 60 minutes.
  5. Uncover; bake for an additional 5 minutes. Let stand for 10 to 15 minutes before serving.

Note: If you prefer the taste of cooked onions you may opt to saute the onion in reserved bacon drippings for more flavor.
