Quick and Easy Lemon Pepper Cod Recipe

Introducing more seafood into your diet is always a great idea. Seafood is low in fat and calories, but packs in the protein. It also comes with other nutrients to help keep your family healthy. Cod is accessible for the majority of Americans out there. If you can find it fresh, that's great. Otherwise, frozen cod will work just fine for this recipe.

A good seafood recipe doesn't need to be complicated. A simple lemon pepper seasoning will bring any piece of cod to life. Some people complain that seafood is too bland for their liking; we say that they simply haven't tried the right recipe yet!

We recommend serving this lemon pepper cod with steamed white rice. Fish and rice is a simple combination, but it's one that works incredibly well. As an alternative, you can also serve couscous. To add some flavor to the couscous, make it with some Parmesan.

Always make sure your fish is sustainably sourced. Unfortunately, many companies source their fish in ways that are detrimental to the environment. Be wary of farm-raised fish, as they are often raised in unsanitary or otherwise poor conditions. By doing your research and taking a little care, you can help protect wild fish populations while enjoying delicious seafood.

Lemon Pepper Fish with Steamed White Rice

Ingredients:

1 pound frozen cod, thawed
16 ounce package frozen stir-fry vegetables
Salt to taste
1 teaspoon lemon-pepper
1 teaspoon dried rosemary
1 cup tomato juice
2½ Tablespoons grated Parmesan cheese

Directions:

1. Line a 13×9 baking dish with aluminum foil.

2. Place cod in dish and cover with vegetables. Season with salt, lemon-pepper and rosemary.

3. Pour tomato juice over everything, sprinkle with Parmesan cheese.

4. Bake at 400 degrees F for 20 to 25 minutes or until fish flakes and vegetables are tender.

5. Serve with steamed white rice. Makes 4 servings.
