Muffin-Sized Meatloaves and Garlic Mashed Potatoes

Ingredients:

2 eggs, lightly beaten
1/4 cup milk
1/4 cup ketchup
1/2 cup crushed corn flakes
4 Tablespoons dried minced onion
1 teaspoon prepared mustard
1 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef

 

Directions:

1. In a large bowl, combine the eggs, milk, ketchup, mustard, corn flakes, onion, salt, and pepper.

2. Add beef into mixture and mix well.

3. Divide among 12 greased muffin cups. Press the meat onto the bottom and up the sides of each muffin cup.

4. Bake at 350° for 25 minutes or until meat is no longer pink. Prepare Garlic Mashed Potatoes (recipe below).

5. Serve immediately with ketchup on top of each meatloaf if desired. Makes 6 servings.

Garlic Mashed Potatoes

Ingredients:

3 cups water
5 Tablespoons butter, cubed
1 teaspoon garlic powder
3/4 teaspoon salt
1/4 teaspoon pepper
1 cup milk
3 cups mashed potato flakes

 

Directions:

1. Combine the water, butter, garlic powder, salt, and pepper in a large saucepan. Bring to a boil.

2. Remove from the heat and add milk.

3. Stir in mashed potato flakes with a fork. Makes 6 servings.
