There are many different pot roast recipes out there that you can choose from. A lot of them are great, but very few can hold a candle to this one. This Yankee pot roast recipe is one you'll find yourself wanting again and again. Your family will love it, too!

Of course, you'll need a chuck pot roast for this recipe. We'll be using a two and a half pound one. Potatoes and carrots are also in this recipe, because you can't have a proper pot roast without them! Other ingredients include celery, onion, bay leaves, rosemary leaves, thyme leaves, and reduced-sodium beef broth.

Regular beef broth can contain a lot of sodium. Sodium is okay in moderation, and is necessary to a certain level. Too much sodium, however, can cause a variety of health problems. Protect your health and your family's health by using reduced-sodium beef broth in this recipe.

Yankee Pot Roast


1 beef chuck pot roast (2½ pounds)
3 medium baking potatoes, unpeeled and cut into quarters
2 large carrots, cut into ¾-inch slices
2 ribs celery, cut into ¾-inch slices
1 medium onion, sliced
2 bay leaves
1 teaspoon dried rosemary leaves
½ teaspoon dried thyme leaves
½ cup reduced-sodium beef broth


1. Trim excess fat from meat and discard. Cut into serving pieces; sprinkle with salt and pepper.

2. Combine vegetables, bay leaves, rosemary, and thyme in crock pot.

3. Place beef over vegetables in crock pot. Pour broth over beef.

4. Cover and cook on low 8½ to 9 hours or until beef is fork-tender.

5. Remove beef to serving platter. Arrange vegetables around beef. Remove and discard bay leaves.
