Chicken is a great base for any meal. It’s lean, packed with protein and versatile enough to work with several combinations of ingredients.
There are many ways you can add flavor and texture to chicken to change things up for your family dinner. One way is to add cheese.
While any cheese will work well with chicken, we feel mozzarella has a creamy, milky flavor that is the perfect complement to chicken’s light and neutral taste.

Chicken Mozzarella Bake
When most of us think of chicken and mozzarella cheese, the first thing that comes to mind is chicken parmesan.

This recipe is not unlike chicken parmesan, but the key ingredient of tomato sauce is omitted.
To make the meal, slice chicken breasts into serving size portions. Place in a bowl of slightly beaten egg and refrigerate for one hour.
When you take it out, it will be ready to be dipped into a mixture of breadcrumbs and Parmesan cheese. Fry in butter until brown.
Mushrooms are an optional ingredient in this dish. If you are using them, you will want to sauté them in advance and put them on top of the breaded chicken.
Put the chicken in a dish and bake. Then put cheese slices on top and put the chicken back in the oven until the cheese melts.
The chicken can be served with a side of veggies, potato, pasta or a nice, fresh salad. It is sure to make for a meal your family will love.
One variation on our mozzarella chicken recipe is the Balsamic Baked Chicken Breast. To make the recipe, put the chicken breasts in a baking dish. Drizzle with olive oil and season with oregano, basil, salt, pepper and garlic. Arrange tomato and onion around the chicken.
Whisk together a combination of balsamic vinegar, sugar and garlic and pour over both sides of the chicken breast.
Bake until the chicken is no longer pink in the middle. Then sprinkle with cheese and put the dish back in the oven until the cheese is melted. Garnish with parsley and serve.
Mozzarella Chicken Salad
Chicken and mozzarella can make for a great hot dish, but it can also make the perfect base for a salad.
Though we often think of mozzarella as a cheese that works well when melted, the Caprese salad has made us realize that mozzarella can also be delicious when served cold and added to a salad.
For those that don’t know, the Caprese salad is an Italian salad made with mozzarella, tomatoes and sweet basil and seasoned with salt and olive oil.
It is typically served layered on a plate and makes a terrific Italian tribute as it features all the colors of the Italian flag.
There are many variations of the Caprese salad and some feature chicken. Here are some mozzarella chicken salad recipes we recommend.
Chicken Avocado Caprese Salad: What sets this recipe apart is that it includes instructions on how to make a homemade dressing.
To make the dressing, combine balsamic vinegar, olive oil, brown sugar, minced garlic, dried basil and salt. This mixture will serve as a dressing for the salad as well as a marinade for the chicken.
Cook chicken and cut into strips. Combine with avocado slices, cherry tomatoes, balls of marinara cheese and basil leaves.

Caprese Chicken over Warm Spinach Salad: Salads are typically a great meal for the summertime, but this warm spinach salad can make the dish perfect for any time of year.
The chicken is dipped in an egg batter and then coated in a Parmesan cheese and bread crumb mixture to give it a nice, light breading.
A warm dressing is made using olive oil, shallots, champagne vinegar, mustard, salt and pepper. This is used to coat the tomatoes and spinach.
The tomatoes and spinach then line the plate as a base and the chicken is sliced and put on top for a meal that can work any day!

Mozzarella Chicken Recipe

Description
Plain chicken doesn’t need to go through a 20 step process with a hundred ingredients to taste good. This recipe has only six ingredients but they work well together to deliver great taste in an easy weeknight dinner favorite. Perfect for all the cheese lovers in your family!
Ingredients
- 4 whole chicken breasts (boneless)
- 3 eggs
- 1/2 cup Italian breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 stick butter (add more as needed, butter reduces with cooking)
- 1/2 lb. Mozzarella cheese
- 1/2 lb. fresh mushrooms (optional)
Instructions
- Slice chicken breasts into serving size pieces. Place chicken in slightly beaten egg for 1 hour and refrigerate.
- If using mushrooms, sauté and set aside.
- Combine the breadcrumbs and Parmesan cheese on a shallow plate. Roll chicken pieces in breadcrumb mixture and fry in butter until brown (about 10 minutes). Add additional butter as needed for frying.
- Place chicken in 9 x 13 dish and place mushrooms on top (if using).
- Bake for 10 to 15 minutes in a preheated 325 degree oven.
- Remove from oven, place Mozzarella cheese cheese on top.
- Place chicken back in oven until cheese melts.
