Swiss Steak Recipe

There are many different, slightly varied Swiss steak recipes out there.  Swiss refers to the tenderizing of the steak since round steak tends to be tough.

This Swiss steak recipe is a simpler, more straightforward version.  Some other recipes call for the use of Worcestershire sauce and various other chopped vegetables.  This is the perfect recipe for those carnivores that don’t want to fuss with vegetables.

Ingredients:

1/2 cup sifted flour
3 teaspoons salt
1/2 teaspoon pepper
1 (2 pound) round steak (1 1/2-inch thick)
3 tablespoons fat
1 small onion, minced
2 cups tomatoes

Directions:

1. Mix flour, salt and pepper.

2.  Pound into steak with tenderizer or potato masher. Brown in fat in heavy skillet.

3. Add onions to tomatoes. Boil 5 minutes. Pour over steak.

4.  Bake at 350 degrees F for 2 hours.
