Italian Smothered Chicken
Ingredients:
½ teaspoon dried oregano
 ¼ teaspoon garlic powder
 ¼ teaspoon salt, divided
 ¼ teaspoon pepper, divided
 4 boneless skinless chicken breast halves (4 ounces each)
 2 teaspoons canola oil
 1 cup part skim ricotta cheese
 1 cup crushed tomatoes
 4 slices part skim mozzarella cheese
Directions:
1. In a small bowl, combine the oregano, garlic powder, ⅛ teaspoon salt, and ⅛ teaspoon pepper; rub over chicken.
2. In a large nonstick skillet coated with cooking spray, brown chicken in oil for 3 to 4 minutes on each side.
3. Transfer chicken to an 11 in. x 7 in. baking dish coated with cooking spray.
4. Combine ricotta cheese and remaining salt and pepper; spoon over chicken. Top with tomatoes.
5. Bake, uncovered, at 350° for 15 minutes. Top with cheese. Bake 5 to 10 minutes longer or a meat thermometer reads 170°.
