Green Onion and Cornbread Stuffing

Stuffing or dressing is one of those Thanksgiving side dishes. In my house growing up, it was pretty much a main course all by itself.

It complements the turkey, mashed potatoes, and vegetables nicely. The soft, fluffy textures and warm spicy flavor is the epitome of comfort food.

It’s easy to make this onion and cornbread stuffing, and you can rest assured that your guests will love it along with the turkey dinner you're planning. It’s flavorful, and it goes a long way. It’s also surprisingly versatile, so you can add other ingredients to it if you like, or even substitute different ingredients to fit your dietary needs.

Cornbread Stuffing Ingredient Alternatives

The onions in this cornbread stuffing recipe are what make the dressing so moist and flavorful. If you don’t love onions, you can leave them out and substitute them with extra celery or even peppers. If you enjoy the flavor of onion but don’t necessarily like pieces of onion in your food, don’t worry. The French onion soup mix that is added to the dressing recipe will still give it plenty of flavor.

Try serving it stuffed inside your turkey. Many people already enjoy dressing this way, and if you haven’t served it like this before, it may be a fun surprise for your guests. The juices from the turkey also add more flavor to the cornbread stuffing and help to keep it warm and moist.

Another option is to make individual cornbread dressing cups. Instead of baking the dressing in a casserole dish, portion it into a muffin pan and bake it. Remove the stuffing cups and add them to a basket on the table. Instead of scooping the dressing from a dish, guests can just pick one from the basket. The dressing will still hold together, but guests can enjoy their own personal serving.

Ingredients

Scale
  • 1 can (10½ ounces) condensed French onion soup
  • 1 soup can water
  • ¼ cup butter
  • 1 cup celery cut into ¼ inch cubes
  • 1 cup green onions thinly sliced
  • 1½ teaspoons poultry seasoning
  • 2 packages (8 ounces each) cornbread stuffing mix
  • Vegetable cooking spray

Instructions

  1. Preheat oven to 350°F.
  2. In 5-quart saucepan combine soup, water, margarine, celery, onions, and poultry seasoning. Bring to boil and remove from heat.
  3. Stir in cornbread stuffing mix.
  4. Bake stuffing in 1½ quart casserole coated with non-stick vegetable cooking spray.
  5. Bake, covered, at 350°F for 45 minutes or until set.
