Mini Baked Brie

Ingredients:

1 package ( 17 1/2 ounces) frozen puff pastry, thawed
1/4 cup apricot preserves
1 (5 inch) brie round, cut into 32 chunks

Directions:

1. Preheat oven to 400F.

2. Cut each puff pastry sheet into 16 squares.

3. Spread 1/2 teaspoon apricot preserves on each square.

4. Place chunk of brie on one side of square, fold over opposite edge, seal with a fork.

5. Bake 10-12 minutes or until pastry is light golden brown.
