Easy Ruben Chicken Casserole Recipe

Use your slow cooker to make this delicious and simple Ruben chicken casserole for something different for dinner tonight. Ruben sandwiches are very popular, but turning them into a casserole will give you a special dinner that everyone will love. The use of a crock pot for this recipe is what makes it so easy to prepare.

Make sure you grab some Russian salad dressing for this recipe. This specific kind of dressing is a big part of what makes Ruben Ruben, so don't leave it out or substitute it for something else. You'll also need some sauerkraut, chicken, prepared mustard, and Swiss cheese. That's it! With those ingredients in hand, you can make this recipe.

This recipe will need to cook for four hours on low. It doesn't need to cook for as long as some other slow cooker recipes out there. If the chicken isn't quite cooked through, continue cooking until it is tender and fully cooked. Most slow cookers should be able to accomplish this in four hours, but don't worry if your slow cooker takes a little longer!

Easy Ruben Chicken Casserole

Ingredients:

32 ounces sauerkraut (jar or bag), rinsed and drained, divided
1 cup Russian salad dressing, divided
4 to 6 boneless skinless chicken breast
1 tablespoon prepared mustard, divided
4-6 slices Swiss cheese

Directions:

1. Layer half the sauerkraut in the bottom of a greased 5-6 quart slow cooker. Drizzle with cup of dressing.

2. Place 2 to 3 chicken breasts on top and spread half the mustard over the chicken.

3. Top with the remaining sauerkraut and chicken breasts; drizzle another cup of dressing over all and reserve the remaining dressing for serving.

4. Cover and cook on low for 4 hours, or until chicken is cooked through and tender.

5. To serve, place each breast on a plate. Divide the sauerkraut over top the chicken. Top each with a slice of Swiss cheese and a drizzle of the remaining dressing.
