Cover your chicken breasts in plastic and flatten them with a meat mallet to 1/2 inch thickness. Crush the saltine crackers until fine. Throw in a tablespoon of black pepper and a teaspoon of chili powder. Coat the chicken breasts in flour and evaporated milk, and then shake the chicken together with the cracker mixture in a bag. Bake at 350 for 20-30 minutes.

  • 6 boneless, skinless chicken breasts
  • 1 sleeve of Ritz round crackers
  • Garlic salt
  • Ground black pepper
  • 6 teaspoons butter

Instructions

  1. Run the crackers through a food processor or crush with a rolling pin until they are very fine.
  2. Rinse each chicken breast under cold water, roll in the crushed crackers, and placed in a greased 13 x 9 inch baking dish.
  3. Sprinkle with garlic salt and pepper. Place a teaspoon of butter on top of each chicken breast.
  4. Bake at 350 degrees F for one hour or until chicken is no longer pink inside.
