Oooh, Ritzy chicken…sounds fancy doesn’t it?

Well, the truth is, to make this elevated dish, all you need are Ritz cracker and select seasonings. This makes for a breading that is light, flavorful and absolutely delicious.

Ritzy Chicken

To make this recipe, you must first run Ritz crackers through a food processor or crush them with a rolling pin until they achieve a very fine texture.

Next, the chicken breasts are run through cold water, rolled in crushed crackers and placed in a greased baking dish. Then they are sprinkled with garlic salt and pepper and a teaspoon of butter is placed on top of each breast.

The chicken is then baked for one hour at 350 degrees or until the chicken is no longer pink inside.

This dish is easy to make and sure to be a crowd-pleaser. It can be served with a variety of sides including rice, potatoes, vegetables or a nice light salad.

What really sets this meal apart is the use of Ritz crackers.

Ritz crackers are a brand of crackers made by the Nabisco company. They are circular and lightly salted on one side. They have a small scalloped edge.

The taste of Ritz crackers can be described as buttery, salty and crunchy with a hint of sweetness. They are available in several varieties including:

  • Low sodium
  • Reduced-fat
  • Whole wheat
  • Honey wheat
  • Roasted vegetable
  • Bacon
  • Garlic butter
  • Honey butter

Cracker Breaded Chicken

While breadcrumbs are usually used to bread chicken, crackers can make a great substitute.

Ritz crackers work well for breading chicken, but other crackers can be used as well. Saltines, soda crackers, graham crackers and even Goldfish crackers can all be used as a breading. Let’s take a look at some other recipes that make for a great cracker breaded chicken.

Goldfish Chicken Nuggets: This meal is great for mothers of young children.

To make the dish, you combine crushed Goldfish crackers with breadcrumbs, brown sugar and salt in a shallow dish. Drizzle oil over the dish and mix thoroughly.

Pour flour into a separate shallow dish and eggs into a third shallow dish.

Next take chicken breast tenderloins cut into 2” pieces and roll them in the flour, then the egg and finally the bread crumb mixture. Place on a greased baking sheet and bake until crisp and golden brown.

Serve to your child with their favorite dipping sauce for a meal they are sure to have lots of fun eating.

Saltine Cracker Breaded Chicken: This is a more adult variation that does not require any additional salt.

To make the dish, start by covering chicken breasts in plastic and flattening with a meat mallet until they are approximately ½” thick.

Next, place the saltine crackers in a plastic bag and crush until the texture is fine. Add a tbsp. of black pepper and a tsp. of chili powder to flavor.

Coat the chicken breasts in flour and dip them in evaporated milk. Place the chicken in the bag with the cracker mix and shake until the meat is coated in the crumbs.

Arrange the chicken on a baking dish and bake at 350 for 20-30 minutes.

You can also pan-fry the chicken in a skillet with cooking oil. If you choose this method, the chicken should be flipped at regular intervals until they achieve an internal temperature of 165 degrees.

Cracker breaded chicken can make for a great meal and Ritz crackers can elevate the dish to the next level when considering taste and texture. Ingredients

  • 6 boneless, skinless chicken breasts
  • 1 sleeve of Ritz round crackers
  • garlic salt
  • ground black pepper
  • 6 teaspoons butter

Instructions

  1. Run the crackers through a food processor or crush with a rolling pin until they are very fine.
  2. Rinse each chicken breast under cold water, roll in the crushed crackers, and placed in a greased 13 x 9 inch baking dish.
  3. Sprinkle with garlic salt and pepper. Place a teaspoon of butter on top of each chicken breast.
  4. Bake at 350 degrees F for one hour or until chicken is no longer pink inside.
