Ritzy Chicken
To make this recipe, you must first run Ritz crackers through a food processor or crush them with a rolling pin until they achieve a very fine texture.

Pour flour into a separate shallow dish and eggs into a third shallow dish.
Next take chicken breast tenderloins cut into 2” pieces and roll them in the flour, then the egg and finally the bread crumb mixture. Place on a greased baking sheet and bake until crisp and golden brown.

Saltine Cracker Breaded Chicken: This is a more adult variation that does not require any additional salt.
To make the dish, start by covering chicken breasts in plastic and flattening with a meat mallet until they are approximately ½” thick.
Next, place the saltine crackers in a plastic bag and crush until the texture is fine. Add a tbsp. of black pepper and a tsp. of chili powder to flavor.
Coat the chicken breasts in flour and dip them in evaporated milk. Place the chicken in the bag with the cracker mix and shake until the meat is coated in the crumbs.
Arrange the chicken on a baking dish and bake at 350 for 20-30 minutes.
You can also pan-fry the chicken in a skillet with cooking oil. If you choose this method, the chicken should be flipped at regular intervals until they achieve an internal temperature of 165 degrees.

Ingredients
- 6 boneless, skinless chicken breasts
- 1 sleeve of Ritz round crackers
- garlic salt
- ground black pepper
- 6 teaspoons butter
Instructions
- Run the crackers through a food processor or crush with a rolling pin until they are very fine.
- Rinse each chicken breast under cold water, roll in the crushed crackers, and placed in a greased 13 x 9 inch baking dish.
- Sprinkle with garlic salt and pepper. Place a teaspoon of butter on top of each chicken breast.
- Bake at 350 degrees F for one hour or until chicken is no longer pink inside.
