Sausage-Corn Chowder Recipe

Corn chowder is a delicious soup with a sweet taste that can warm you up on a winter’s day. In this version, we made the soup heartier with the addition of sausage.

Read on to find out how you can make this delicious dish for your family.

Sausage Corn Chowder

Corn chowder soup is a cream-based chowder soup that uses corn as the primary ingredient. It is similar to clam chowder only the corn is the featured ingredient as opposed to the clams.

Other ingredients that are commonly found in corn chowder soup include onion, celery, milk, cream or butter. Additional ingredients can also be added including potatoes, seafood, chicken and, of course, sausage.

The earliest written form of the recipe dates back to 1884 when Mary Lincoln of the Boston Cooking School published it in the Boston Cook Book. Since then, other recipes for corn chowder were published with different variations that gave the meal a unique taste.

For our recipe, we start by cooking 12 oz. reduced fat sausage broken up into pieces with ¾ cup chopped onion. Drain fat.

Next mix 1 can condensed chicken soup with herbs with 1 ¾ cup milk until smooth.

Add the sausage and onion mix along with 1 (15 oz.) can cream corn. Cook until heated.

The soup makes a great lunch time meal, which can be made heartier with the addition of crackers, baked potato or breadsticks. You can also serve it alongside a sandwich or entrée to make it into more of a dinner type meal.

Alternately, it can be served as an appetizer at multi-course meals.

Although we use canned corn in this meal, some home cooks may want to use fresh corn cut off the cob to give their soup more of a homemade taste. They can also make variations by using different types of vegetables or different types of sausage to give their soup a unique taste.  

 Best Corn Chowder Recipe

As stated earlier, there are many variations on the corn chowder soup recipe, and we couldn’t possibly say which is the best. However, we will recommend a few that you might want to try.

Best Ever Corn Chowder: Try this recipe to see if it’s all it’s cracked up to be.

To make the recipe, start by cooking ½ cup diced onions and 1 cup diced celery in ¼ cup melted butter. Then add 2 ½ cups hot water, 2 cups peeled and cubed potatoes, 3 cups frozen corn, 2 tbs. sugar, 2 tsp. salt and ½ tsp pepper.

Cover and simmer about 30 minutes, until potatoes are soft.

In a small bowl, mix 3 tbs, flour with 1 cup half and half. Stir into the soup and then add 3 cups remaining half and half to the soup.

Heat until the soup gets thick smushing the potatoes against the side of the pot stirring often.

Cool and stir in 6 slices of bacon cooked and crumbled. Serve or seal and freeze to serve later.

Cajun Corn Chowder: If you like your corn chowder with a kick, here’s how it’s done.

Start by heating 1 tbsp olive oil over medium high heat. Add 1 medium onion peeled and diced and sauté for 3 minutes stirring occasionally. Add 1 green pepper cored and diced, 2 ribs celery and 4 cloves garlic. Continuing sautéing for another 5 minutes stirring occasionally.

Add 6 cups vegetable stock, 1 ½ cups Yukon potatoes diced into ½ cubes, 1 (14 oz.) bag of frozen corn, 1 cup of red lentils and 2 tbsp. Cajun seasoning. Stir to combine.

Continue cooking until the mixture starts simmering. Then reduce the heat to medium-low, cover and cook 10-15 minutes more stirring occasionally until potatoes and lentils are tender.

Stir in 1 (14 oz) can coconut milk and add salt or more Cajun seasoning if desired.

Recommended garnishes include chopped green onions, bacon and oyster crackers.

Not only does this Cajun soup have an ethnic cook, it is also a very healthy recipe you can feel good about serving your family.

Corn chowder is a soup that warms the body and soul. The addition of sausage makes it hearty and delicious although many variations will also do the trick. How will you be preparing your corn chowder so that it puts a smile on your family’s faces?

  • 12 ounces reduced fat sausage
  • ¾ cup chopped onion
  • 1 can (10¾ ounce) condensed chicken soup with herbs
  • 1¾ cup milk
  • 1 can (15 ounces) cream corn

Instructions

  1. In large saucepan, cook sausage and onion, breaking sausage up into small pieces, drain fat.
  2. Combine soup and milk until smooth.
  3. Add to sausage along with the corn.
  4.  Cook until heated through.
