Creamy Chicken Spinach Soup Recipe

Mmmm… who doesn’t love a nice steaming cup of soup on a cold winter day?

A creamy chicken spinach soup is hearty and delicious, and it contains healthy ingredients that can boost your immune system preparing you for cold and flu season.

Read on to find out more about this recipe and other soup variations you can make for your family.

Creamy Chicken Spinach Soup

The recipe we have here is pretty easy to prepare. You start by taking a 9-ounce package of refrigerated cheese tortellini and preparing it according to package directions except you cook it in 1 can of fat-free chicken broth instead of water.

Then you add the remaining ingredients which include reduced-fat cream of chicken soup, a package of frozen spinach, chicken breast, 2 cups fat-free soup, and ½ teaspoon dried thyme.

Bring to a boil, reduce heat to medium and cook until thoroughly heated.

One of the reasons we love this chicken soup recipe is because it’s so healthy. The soups used are fat-free or reduced-fat and sodium-free.

Both chicken and chicken soup have immune system boosting properties, have been shown to reduce stress and are good sources of protein.

Spinach is a good source of vitamin K, vitamin A, vitamin C, and folate. It is also rich in manganese, magnesium iron, and vitamin B2. Its high vitamin A content makes it perfect for supporting bone health.

While this creamy chicken spinach soup is a tasty and comforting recipe, there are other variations of creamy chicken soup that can be made. Here is one we recommend for a creamy chicken and mushroom soup.

To prepare the soup, start by heating olive oil in a large stockpot or Dutch oven over medium heat. Season chicken thighs with salt and pepper. Add chicken to the stockpot and cook 2-3 minutes.

Melt butter in a stockpot or Dutch oven over medium heat. Add garlic, mushrooms, onion, carrots, and celery. Cook until tender, about 3-4 minutes. Stir in thyme and cook an additional minute.

Whisk in flour. Then add chicken stock, bay leaf and chicken thighs. Cook whisking constantly.

Stir in half and half and season with salt and pepper to taste. If the soup is too thin, add more half and a half until the desired consistency is reached.

Serve immediately. Garnish with parsley and rosemary if desired.

Chicken and Spinach Soup

Of course, not all chicken soup has to be creamy. If you are looking to make a chicken soup with a thinner consistency, here are some recipes we recommend.

Chicken, Spinach and Potato Soup: To make this recipe start by bringing chicken thighs, chicken stock, and water to simmer in a large saucepan over medium-high heat for about 20 minutes. Remove chicken thighs and set aside to cool. Reserve broth.

Heat olive oil in a large pot over medium heat. Stir in onion and garlic. Cook until onion has softened, about five minutes.

Add potatoes, then strain the leftover cooking liquid into the pot.

Bring to a boil, then reduce heat to medium-low and simmer about 25 minutes or until potatoes are tender.

Cut chicken into cubes and add to simmering potatoes. Cook 5 minutes, then stir in garbanzo beans, spinach, and roasted pepper. Simmer an additional ten minutes then season with salt and pepper to taste. Sprinkle with grated parmesan and serve.

Chicken, Bean and Spinach Soup: To make this healthy recipe, start by heating a tablespoon of olive oil on medium-high heat. Add chopped onion and cook 1 minute. Then add chopped green bell pepper and cook for one more minute. Remove vegetables from pan.

Add another tablespoon of olive oil to the pan and heat it on medium-high heat. Slice chicken into small pieces and season with paprika, oregano, basil, and salt. Sautee on medium-high heat until browned on both sides.

Return onions and pepper to pan and add chopped carrots, tomatoes, red kidney beans, spinach, and minced garlic. Add chicken broth and water as well as a ½ teaspoon oregano and a half teaspoon basil.

Bring to a boil, then simmer 15-20 minutes. Season with salt to taste and serve.
