Mexican Chicken with Doritos and Velveeta

When we think of Mexican food, we think of ingredients like salsa, beans, and guacamole. This dish takes Mexican in a slightly different direction with the addition of Doritos and Velveeta. This makes for a meal that is a well-deserved guilty pleasure for your hard-working family.

The dish calls for 6 boneless chicken breasts which are boiled and cut into bite-sized pieces.

Next, combine the Velveeta with 1 can of cream of mushroom soup, 1 cup of milk and 1 can of Rotel tomatoes. Bring to a boil, then add chicken and simmer 5-10 minutes.

Place a layer of Doritos on the bottom of a casserole dish, add a layer of the mixture, add another layer of chips, more of the mixture and end with chips on top.

When thinking about this dish, it is definitely the addition of Velveeta and Doritos that set it apart.

Velveeta is processed cheese spread and comfort food that many consider addictive. Although it has gotten a reputation for not being the healthiest food, it is lower in fat and calories than most cheeses. It is also a good source of protein.

Doritos is a brand of flavored tortilla chips produced by the American brand Frito Lay. Though originally available in Toasted Corn flavor only, the product has since been made available in various flavors. Chicken Taco Casserole

Chicken taco casseroles are typically chicken tacos disassembled. That is to say, they have the ingredients that are usually found in a taco as well as something to substitute for the hard, crunchy shell…typically some variety of tortilla chips.

There are many variations you can make on the chicken taco casserole recipe. Here are a few we recommend.

Chicken Taco Casserole: For this recipe, you combine and stir shredded chicken with 2 cans of cream of chicken soup, sour cream, tomatoes, green chilis, beans and taco seasoning in a large mixing bowl.

Layer the ingredients alternately putting the chicken mixture on the bottom, tortilla chips in the middle, another layer of the mixture and chips on top.

Bake for 30 minutes and serve.

White Chicken Taco Casserole: This recipe presents a variation on the dish that gives it an austere white appearance that is just as good to eat as it is to look at.

You start by preparing the taco mix which involves putting boiled and shredded chicken into a skillet with butter. Beans, corn, diced tomatoes, and taco seasoning are added, and all ingredients are blended together.

Next, you make a cheesy Bisquick topping. To do this, you whisk together eggs, sour cream, Bisquick and cheddar cheese until the mixture is no longer lumpy.

The chicken taco mix is then put into the bottom of the dish which is covered with the Bisquick topping. Another layer of each is added and the dish is baked uncovered for 30 minutes.

Crushed tortilla chips and cheese are sprinkled on the top, the dish is cooked another 5 minutes while the cheese melts and the casserole is ready to serve.

These are all great recipes you can follow but when it comes to making a Mexican chicken casserole, the possibilities are endless. Just think of what you like to eat in a taco, throw it into a casserole, add tortilla chips and you are good to go.

  • 6 chicken breasts, boneless
  • 10 oz. Velveeta cheese
  • 1 can cream of mushroom soup mixed with 1 cup milk
  • 1 can Rotel tomatoes
  • 1 bag Doritos tortilla chips

Instructions

  1. Boil chicken until cooked throught.Cut into bite sized pieces.
  2. Combine Velveeta, soup mixture and tomatoes; bring to a boil.
  3. Add chicken and simmer 5-10 minutes, stirring often.
  4. Place a layer of Doritos in long casserole dish, then add a layer of the chicken mixture.
  5. Add another layer of chips, another layer of the chicken mixture, ending with chips on top.
  6. Bake at 350 degrees F for 30 minutes.
