Fudge Recipes
Nothing satisfies a sweet tooth better than a piece of velvety fudge. And while just the idea of eating fudge can make one’s mouth water, what’s even better is that it can be made using a variety of flavors so that it can suit any type of sweet tooth.

Of course, there are certain things you should do while making fudge that will guarantee your recipe turns out its best.
Make sure you use fresh, high quality butter (never substitute margarine because it causes fudge to be thin and watery).
Use a heavy pan so you can distribute the heat well. Otherwise the mixture may stick during cooking. (This does not apply if you are using a microwave to make your fudge).
Brush the sides of the pan with a wet brush before beginning. This will dissolve any sugar crystals that may get stuck to the sides.
Never stir the mixture while cooking. This could cause the sugar to crystallize so that the mixture seizes and becomes grainy.
Have a candy thermometer handy for the most consistent results. Do not rely on cook time to indicate when your fudge is ready. Rather, take it out when the thermometer reads 234 to 237 degrees F and the mixture forms a soft ball in cold water.
Let the mixture cool so that it is between 110 and 113 degrees Fahrenheit before beating it.
If the surface starts to look dull or matte, stop beating it. Pour it into a mold that has been buttered or lined with parchment paper and let cool.
