Blueberry Cake Recipe

Blueberry Cake


This blueberry cake uses fresh blueberries, it's the cake to make when those luscious berries are in season. Blueberry season is the perfect time to treat yourself to this wonderfully delicious cake. With a hint of cinnamon sugar, this old fashioned favorite will become a tradition at summer picnics or for family gatherings.

Blueberry Cake

Blueberry Cake Ingredients:

2 eggs, separated
1 cup sugar
1/2 cup butter, softened
1/4 teaspoon salt
1 teaspoon vanilla
1 1/2 cups flour, sifted
1 Tablespoon flour (to coat berries)
1 teaspoon baking powder
1/3 cup milk
1 1/2 cups fresh blueberries
cinnamon sugar for topping (1 Tablespoon sugar mixed with 1/4 teaspoon cinnamon)

 

Blueberry Cake Directions:

1. Preheat oven to 350 degreees F.

2. Beat egg whites until stiff. Beat in 1/4 cup of sugar.

3. In another bowl, cream butter. Add salt, vanilla, and remaining sugar gradually.

4. Add egg yolks and beat until creamy.

5. Sift flour with baking powder. Add alternately to creamed mixture with milk.

6. Fold in beaten egg whites. Coat the blueberries with 1 tablespoon of flour and then fold into mixture.

7. Pour batter into a well greased and floured 8x8 inch pan. Sprinkle cinnamon sugar on top.

8. Bake in 350 degrees F oven for 40-50 minutes. Cool on rack. Dust with powdered sugar if desired.

 

 

Hummingbird Cake Recipe

This hummingbird cake recipe is an old fashioned favorite that gets passed around at potlucks and picnics and family gatherings. Shared for years, this cake recipe has stood the test of time. It's deliciously different, filled with sweet fruit and spicy cinnamon.

Hummingbird Cake

Ingredients:

3 cups flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 eggs, beaten
1 1/2 cups vegetable oil
1 1/2 teaspoons vanilla
1 (8 oz.) can crushed pineapple, drained
2 cups bananas, diced
1 cup chopped nuts

 

Directions:

1. Combine all dry ingredients in bowl. Add eggs and oil, stir until well mixed.

3. Add vanilla, pineapple, bananas and nuts. Mix until well blended by hand with a wire whisk or spoon.

4. Spoon batter into greased and floured 13 x 9 inch pan.

5. Bake in 350 degree F oven for 45 to 45 minutes (test with toothpick). Bake 40 minutes if using 2 (9 inch) pans.

6. Frost with Cream Cheese Frosting (recipe below). 

 


Cream Cheese Frosting


Frosting Ingredients:

1 box confectioners sugar
1 stick (8 Tablespoons) butter
1 (8 oz.) package cream cheese
2 teaspoons vanilla
1 cup chopped nuts

 

Frosting Directions:

1. Beat first four ingredients together with electric mixer.  If too thick, add a little milk. 

2. Frost Hummingbird Cake, sprinkle chopped nuts on top of icing.

 

 

 

Chocolate Strawberry Shortcake Recipe

Strawberry shortcake is luscious, but much like dipping strawberries in chocolate makes the fruit heavenly...so does adding chocolate to the cake in shortcake. As easy to make as traditional strawberry shortcake, the chocolate version is a sure winner for any occasion.

Chocolate Strawberry Shortcake

Chocolate Strawberry Shortcake Ingredients:

3-1/2 cups biscuit/baking mix
2/3 cup plus 2 teaspoons sugar, divided
1/2 cup baking cocoa
1 cup milk
1/3 cup butter, melted
1 egg white
2-1/2 pints fresh strawberries
2 cups heavy whipping cream
3 Tablespoons confectioners' sugar
1 cup chocolate syrup

 

Chocolate Strawberry Shortcake Directions:

1. In a large bowl, combine biscuit mix, 2/3 cup sugar and cocoa.

2. Stir in milk and butter; mix well. Drop by 1/3 cupfuls at least 2 in. apart onto a greased baking sheet.

3. Beat egg white until foamy; brush over shortcakes. Sprinkle with remaining sugar.

4. Bake at 400 degrees F for 15-18 minutes. Cool on wire racks.

5. Set aside 10 whole strawberries; slice remaining strawberries.

6. In a mixing bowl, beat cream and confectioners' sugar until soft peaks form.

7. Split shortcakes horizontally. Spoon half of the whipped cream and all of the sliced berries between cake layers. Spoon remaining whipped cream on top. Drizzle with chocolate syrup; top with a whole berry. Makes 10 servings.

 

 

Cranberry Cake Recipe

This delicious cake recipe is one we use around the holidays, when fresh cranberries are in season. If you can't get fresh cranberries, frozen work just as well because they're frozen at the peak of the season. You can also stock up when the fresh ones are in the stores (usually on sale) and pop them in the freezer to have on hand for great recipes like this one!

Cranberry Morning Cake

Ingredients:

1 package (8 ounces) cream cheese, softened
1 cup butter, softened
1 1/2 cups sugar
1 1/2 teaspoons vanilla extract
4 eggs
2 1/4 cups unbleached flour, divided
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 cups fresh or frozen cranberries (pat dry with paper towels)
1/2 cup chopped walnuts
confectioners' sugar for topping

 

Directions:

1. In a bowl, beat cream cheese, butter, sugar and vanilla until smooth.

2. Add eggs, one at a time, mixing well after each addition.

3. Combine 2 cups flour, baking powder and salt; gradually add to butter mixture.

4. Mix remaining flour with cranberries and nuts; fold into batter. Batter will be very thick.

5. Spoon batter into a greased 10 inch tube pan.

6. Bake at 350° for 50-55 minutes or until a toothpick inserted into the cake comes out clean.

7. Let stand 5 minutes before removing from the pan. Cool on a wire rack then sprinkle confectioners' sugar over the top of the cake

Caramel and chocolate have long been perfect partners and this recipe is one reason why. The rich caramel of the frosting and the deep chocolate cake flavor both shine through without too much of one or the other.

Chocolate Cake with Caramel Frosting

Ingredients:

3 squares (1 ounce each) unsweetened chocolate
1 cup water
1/2 cup butter
2 cups sugar
3 eggs
2-1/2 cups all-purpose flour
1-1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (8 ounces) sour cream

Caramel Frosting Ingredients:

2 cups packed brown sugar
2/3 cup milk
1/4 cup butter, cubed
1/4 teaspoon salt
1 cup confectioners' sugar
2 tablespoons heavy whipping cream
2 teaspoons vanilla extract

 

Directions:

1. In a small saucepan, melt chocolate in water. Remove from the heat; cool completely.

2. In a large bowl, cream butter and sugar until light and fluffy.

3. Add eggs, one at a time, beating well after each addition.

4. Combine the flour, baking soda and salt; add to the creamed mixture alternately with sour cream.

5. Add cooled chocolate mixture; beat on medium speed for 1 minute.

6. Pour into a greased 13-in. x 9-in. baking dish or two greased 8-inch round cake pans.

7. Bake at 350 degrees F for 35-40 minutes for 13x9 or 30-35 minutes for 8-inch round pans. Check for doneness when a toothpick inserted near the center comes out clean. Cool on a wire rack.

 

Frosting Directions:

1. Combine the brown sugar, milk, butter and salt in a large heavy saucepan. Bring to a boil over medium heat, stirring constantly.

2. Cook and stir until a candy thermometer reads 234° (soft-ball stage). Remove from the heat; cool to lukewarm.

3. Transfer to a small mixing bowl; beat in confectioners' sugar, cream and vanilla until mixture achieves spreading consistency. Frost cake.

 

 

 

 

Chocolate Angel Food Cake

With the lightness of angel food and the luxury of chocolate, this cake is wonderful sprinkled with a dusting of powdered sugar or frosted with the chocolate whipped cream frosting recipe below.

Chocolate Angel Food Cake Recipe

Ingredients:

Cake Ingredients:

1-1/2 cups confectioners' sugar
1 cup cake flour
1/4 cup baking cocoa
1-1/2 cups egg whites (about 10)
1-1/2 teaspoons cream of tartar
1/2 teaspoon salt
1 cup sugar

Frosting Ingredients:

1-1/2 cups heavy whipping cream
1/2 cup sugar
1/4 cup baking cocoa
1/2 teaspoon salt
1/2 teaspoon vanilla extract

 

Directions:

1. Sift together confectioners' sugar, flour and cocoa three times; set aside.

2. In a mixing bowl; beat egg whites, cream of tartar and salt until soft peaks form.

3. Add sugar, 2 tablespoons at a time, beating until stiff peaks form.

4. Gradually fold in cocoa mixture, about a fourth at a time.

5. Spoon into an ungreased 10-in. tube pan. Carefully run a metal spatula or knife through batter to remove air pockets.

6. Bake on the lowest oven rack at 375 degrees F for 35-40 minutes or until the top springs back when lightly touched.

7. Immediately invert pan; cool completely. Run a knife around edges and center tube to loosen; remove cake.

8. In a mixing bowl, combine the first five frosting ingredients; cover and chill for 1 hour.

9. Beat until stiff peaks form. Spread over the top and sides of cake.

 

 

Apple Gingerbread Upside-Down Cake Recipe

Apples and gingerbread work well together as a perfect flavor pairing in this twist on the traditional pineapple upside-down cake. It's a warmly spiced cake for fall or great as a different take on plain holiday gingerbread cake.

Ingredients:

Apple Layer:

1/4 cup butter, melted
1/3 cup packed brown sugar
2 large apples, peeled and sliced

Gingerbread Ingredients:

1/2 cup butter, melted
1/2 cup sugar
1/3 cup packed brown sugar
1 egg
1/2 cup molasses
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
3/4 cup hot water

 

Directions:

1. Pour butter into a 9-in. square baking pan; sprinkle with brown sugar.

2. Arrange apples cut side up in a single layer over sugar; set aside.

3. For gingerbread, in a large mixing bowl, cream butter and sugars until light and fluffy. Beat in egg. Beat in molasses.

4. Combine dry ingredients; add to sugar mixture alternately with hot water, beating well after each.

5. Pour over apples. Bake at 350 degrees for 45 to 50 minutes or until a toothpick inserted near the center comes out clean.

6. Cool for 10 minutes before inverting onto a serving plate.

 

 

 

 

Chocolate Chip Cake Recipe

Chocolate chip cake is a simple yet classic favorite. With the taste of a cookie in a dense cake, you get the best of both worlds. This is a perfect cake for pairing with coffee and some recharging time for yourself.

Chocolate Chip Cake

Ingredients:

2 1/2 cups flour
3 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup butter
1 cup sugar
3 eggs
1 cup sour cream
2 teaspoons vanilla
1 cup chopped walnuts
1 cup chocolate chips
1/2 cup brown sugar
2 teaspoons cinnamon

 

Directions:

1. Preheat oven to 350 degrees F.

2. Sift together the flour, baking powder, baking soda and salt.

3. In a separate bowl, cream the butter, sugar and eggs (add the eggs in one at a time, beating after each addition).

4. Add sour cream and vanilla to the creamed mixture, mix well.

5. Slowly add flour mixture to the creamed mixture, mix thoroughly.

6. In another bowl mix the chopped nuts, chocolate chips, brown sugar and cinnamon.

7. Grease a tube pan (angel food cake pan).

8. Pour 1/2 the batter in the pan then sprinkle on 1/2 the chocolate chip mixture.

9. Add the remainder of the batter, then sprinkle the remainder of the chocolate chip nut mix on top.

10. Bake 1 hour at 350 degrees F (check at 45 minutes as oven temperatures vary).

 

 

Chocolate Roll Recipe

Roll cakes are made for frosting lovers! Every bite of cake has filling with it so you don't have to fight for the corner piece of cake anymore. This one has a whipped cream filling, much like the beloved ho-ho's and yodels of childhood.

Chocolate Roll

Chocolate Roll Ingredients :

5 eggs
1/2 teaspoon cream of tartar
1 cup white sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
1 pint heavy whipping cream, whipped
1/4 cup confectioners' sugar for dusting
1/4 cup all-purpose flour

 

Directions:

1. Preheat oven to 325 degrees F (165 degrees C). Line one 15 1/2 x 10 1/2 inch jelly roll pan with parchment paper and grease and flour lightly.

2. Separate the eggs. Beat the whites with the cream of tartar until stiff. Gradually beat in 1/2 cup of the sugar.

3. Sift the remaining sugar, cocoa, and flour together.

4. Beat the egg yolks until thick and fold the flour mixture into them. Stir in vanilla. (The egg yolk mixture will be very stiff).

5. Carefully fold the egg yolk mixture into the beaten egg whites. Evenly spread the batter into the prepared pan.

6. Bake for 20 minutes. Let cake cool for 5 minutes.

7. Turn cake onto a towel sprinkled with confectioner's sugar, peel off parchment paper and roll cake up with the towel. Let cake cool completely.

8. Unroll cake and spread with the whipped cream. Roll again. Refrigerate for one hour before serving.

 

 

Banana Oatmeal Crumb Cake

This is a great tasting breakfast or afternoon coffee cake. Without the extra sweetness of sugary frosting it doesn't have the sugar crash that comes with heavier cakes. We made this as muffins (pictured) and as a cake, it's a versatile recipe and super easy to make. If you're making muffins, check for doneness after 30 minutes. 

Banana Oatmeal Crumb Cake or Muffins

Oatmeal Crumb Cake Ingredients :

3/4 cup all-purpose flour
1 1/3 cups rolled oats
1/4 teaspoon salt
1 teaspoon baking soda

1/2 cup butter, softened
2/3 cup packed brown sugar
2 eggs
1 cup mashed bananas
1 teaspoon vanilla extract

3/4 cup rolled oats
1/3 cup packed brown sugar
2 Tablespoons butter, melted
2 Tablespoons chopped walnuts
1/2 teaspoon ground cinnamon

 

Directions:

1. Stir together flour, 1 1/3 cups rolled oats, salt, and baking soda.

2. In a large bowl, cream 1/2 cup butter with 2/3 cup brown sugar.

3. Beat in the eggs, then the bananas and vanilla.

4. Beat the flour mixture into the banana mixture. Turn the batter into a greased and floured 8 inch square pan.

5. Mix 3/4 cup oats, 1/3 cup brown sugar, melted butter, walnuts, and cinnamon together until crumbly. Sprinkle on top of batter in pan.

6. Bake in preheated oven at 350 degrees F (175 degrees C) for 35 to 40 minutes, or until it tests done. Transfer to a rack to cool.

 

 

 

Cinnamon Swirl Bundt Cake

Perfect for breakfast or as a coffee cake, this wonderfully moist bundt cake is filled with a tasty brown sugar cinnamon swirl. Take it to any gathering or have it ready for a quick breakfast, it's a dessert sure to go fast!

Cinnamon Bundt Cake Recipe

Ingredients:

3/4 cup butter
1 1/2 cups white sugar
3 eggs
1 teaspoon vanilla extract
1 cup sour cream
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup chopped walnuts


Filling Ingredients:

2 Tablespoons ground cinnamon
1/2 cup brown sugar

 

Directions:

1. Preheat oven to 400 degrees F. Lightly grease one 10 inch bundt pan.

2. Cream butter and 1 1/2 cups white sugar until well blended.

3. Add eggs, mixing well after each addition. Stir in vanilla.

4. Add sour cream, beat well.

5. Add flour, baking soda, and baking powder and mix well. Stir in the chopped nuts.

6. In a separate bowl, mix the brown sugar with the cinnamon.

7. Pour half of the batter into the prepared pan. Sprinkle generously with the cinnamon sugar mixture. Cover with remaining cake batter.

8. Bake at 400 degrees F for 8 minutes.

9. Lower heat to 350 degrees F and bake for an additional 40 minutes.

 

 

Strawberry Shortcake Recipe

Nothing says summer like old fashioned strawberry shortcake. With a crumbly cake filled with sweet, sun kissed strawberries and fresh whipped cream; this recipe is a delightful taste of summertime in every morsel.

Strawberry Shortcake

Ingredients:


Cake Ingredients

2 quarts fresh strawberries, sliced
1 cup sugar
2 cups all-purpose flour
2 Tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter
1 egg
1 teaspoon vanilla extract
1/2 cup heavy cream


Topping Ingredients:

2 cups heavy whipping cream
1 teaspoon pure vanilla extract
2 Tablespoons granulated white sugar

 

Directions:

1. Combine strawberries and sugar; set aside for about an hour so a good amount of juice forms.

2. In a large bowl, sift together dry ingredients. Cut in butter until crumbly.

3. In another bowl, beat egg; add vanilla extract and cream. Add to crumb mixture, stirring only until moist.

4. Pat into a greased 8-in. square or round baking pan. Bake at 450 degrees F for about 15 minutes or until golden.

5. Remove from pan; cool on wire rack.

 

Directions for whipped cream:

1.  In a large mixing bowl place the whipping cream, vanilla extract, and sugar and stir to combine.

2. Cover and chill the bowl and beaters in the refrigerator for at least 30 minutes.

3. When chilled, beat the mixture until stiff peaks form.  The whipped cream will hold for several hours in the refrigerator.

 

To Serve:

1. Cut the cake in half and place the bottom half of the cake on a plate.

2. Top with half of the strawberries and whipped cream. Place the top half of the cake on the strawberries.

3. Top with the rest of the whipped cream and strawberries. If there is any juice from the strawberries, drizzle a little over the top of the cake.

 

 

 

 

Gooey Butter Cake

This wonderfully simple cake is rich and gooey, without the need for frosting of any kind. Famous in St. Louis and sold in dozens of flavors there, the plain is still the all-time favorite choice. If you haven't had butter cake, this is a must-try St. Louis treat! If you have had it, this is the recipe for the gooey butter cake with the crackled top just waiting to be devoured.

Cake Ingredients:

1 (18.5 ounce) package yellow cake mix
1/2 cup butter, melted
1 egg
1 teaspoon vanilla extract


Gooey Buttery Topping Ingredients:

1 (8 ounce) package cream cheese, softened
2 eggs
1/2 cup butter, melted
1 teaspoon vanilla extract
4 cups confectioners' sugar

 

Directions:

1. Preheat oven to 350 degrees F.

2. Mix cake mix, melted butter, egg, and 1 teaspoon vanilla until well blended.

3. Pat batter into a 9 X 13 inch baking pan.

4. Mix cream cheese, 2 eggs, butter, and 1 teaspoon vanilla with an electric mixer.

5. Slowly beat in confectioner's sugar. Mix well, then pour mixture evenly over cake layer.

6. Bake for 40 to 45 minutes. Cake will be gooey in center. Cool before serving.

 

 

 

Mafioso Chocolate Cake

Mafioso Chocolate Cake with La Famiglia Chocolate Frosting is just as rich as the Don himself. Surrounded by the best ingredients instead of bullets, this is the cake to serve for family gatherings (that don't involve illegal plotting and revenge).

While the secrets of La Famiglia remain shrouded in mystery, the recipe for their chocolate cake doesn't. Enjoy!

Mafioso Chocolate Cake Recipe

Ingredients:

1/2 cup Dutch process cocoa powder
3/4 cup boiling water
1 cup sour cream
1/2 teaspoon baking soda
2 cups sifted cake flour
1/2 cup butter
2 cups white sugar
3 egg whites
1 1/2 teaspoons vanilla extract
6 Tablespoons butter, softened
3/4 cup Dutch process cocoa powder
2 2/3 cups confectioners' sugar
1/2 cup milk
1 teaspoon vanilla extract

 

Directions:

1. In a small bowl, mix together 1/2 cup cocoa and 3/4 cup boiling water; set aside.

2. In another small bowl, dissolve baking soda in the sour cream by stirring them together.

3. In a large bowl, cream the 1/2 cup butter and 2 cups sugar. To the butter and sugar mixture, alternately add the sifted flour and the cocoa mixture with the sour cream mixture. Beat until fluffy.

4. Beat the egg whites until stiff and fold in the egg whites and 1 1/2 teaspoons of vanilla.

5. Grease a 9x13 inch pan and pour the batter into it. Bake at 300 degrees F (150 degrees C) for 50 minutes. Frost with La Famiglia Chocolate Frosting (recipe below).

 


To Make La Famiglia Chocolate Frosting:

1. Cream 6 tablespoons butter or margarine in a small bowl.

2. Add 3/4 cup cocoa and confectioner's sugar alternately with milk; beat until spreading consistency. More or less milk can be used depending on the texture you want.

3. Blend in the vanilla. This yields about 2 cups of frosting.
