Beets are an often underrated vegetable that so many people never try. And yet, they're so rich in nutrients and pack a flavorful punch that it's a shame they don't get their due. While beets have enjoyed a bit of the spotlight in recent years thanks to the smoothie and juicing crazes, sometimes the simplest implementation is the tastiest. With that in mind, whip up this simple roasted beets recipe and serve it alongside a healthy protein for a well-rounded meal.

Simple Roasted Beets

Ingredients

Scale
  • 6 medium of Beets
  • 2 tbsp of Olive Oil
  • 1 tsp of Salt
  • 1/2 tsp of Pepper

Instructions

  1. Preheat oven to 400 degrees F.
  2. Wash and trim the beets.
  3. Toss beets in olive oil, salt, and pepper.
  4. Roast for 45 minutes or until tender.
